THE PROCESS

This Daftmill Winter Release is a Lowland single malt created from a selection of carefully matured casks, including a notable proportion of ex-Sherry casks. The whisky was distilled in 2012 and bottled in 2026 as part of the distillery’s seasonal Winter Release.

The casks were selected by Francis Cuthbert to highlight Daftmill’s signature spirit character, balancing rich sherry influence with the distillery’s classic barley sugar and shortbread notes. The whisky was bottled at 46% ABV as a limited release.

TASTE PROFILE

Bright and inviting on the nose, aromas of rich Christmas cake emerge alongside notes of barley sugar and freshly baked shortbread.

On the palate, the whisky is round and mouthcoating, revealing layers of sweet malt, dried fruit and warming baking spices, supported by a gentle sherry richness.

The finish is smooth and satisfying, with lingering notes of sweet pastry, soft spice and the distinctive cereal character that defines Daftmill’s spirit.
