THE PROCESS

The violet (Viola odorata) is a species of flowering plant with purple or white flowers, native to Europe, Asia and North Africa, which belongs to the Violaceae family. It is known for its medicinal properties and many benefits, including expectorant and anti-inflammatory. In the language of flowers, the violet symbolizes shy and secret love. The violet is often used in confectionery, and sometimes in pastry, for syrups, liqueurs and in perfumery. Created in the 19th century, crème de violette peaked at the end of the century. Today, popular cocktails made with crème de violette include Aviation and Blue Moon.

TASTE PROFILE

Bright violet in colour, with a delicate floral aroma that is reminiscent of springtime. Notes of violet and rose lead the way, unfolding into an intensely aromatic yet smooth and elegant taste.
