NCNEAN - [BIO] Quiet Rebels Whisky Amy

THE PROCESS

Amy is a big Port fan, but also the head of sustainability within NCNEAN, so how could these two worlds be combined? A search for a winemaker who makes wine through bio-diversity had begun. They found these in the south of France.
In the south of France is Clot de l'Origine, a winemaker of fortified wine called Maury. The biodiversity method is expressed, among other things, in the installation of insect houses, the use of a horse for plowing, but also by placing trees around the vineyards. A winemaker who is fully committed to sustainability.

The barrels used in the Quiet Rebels NCNEAN are as follows:
19% Maury
18% Bourbon
63% STR Red Wine
