Noble Coyote is known for working with different wild agave varieties for their mezcal production. For this expression, the rare Jabalí agave was used, a wild variety that requires approximately 12 years to reach full maturity before harvest.
After harvesting, the agaves were traditionally cooked and then milled by hand using wooden mallets to carefully extract the juices. The fermentation process was carried out with close attention to detail, after which the mezcal was double distilled in copper alembic stills to preserve the distinctive character of the Jabalí agave.
All these processes were carried out by Marcos & Eleazar Brena, who applied their knowledge, skill and craftsmanship to create a mezcal with remarkable depth and complexity.

The Jabalí agave is a challenging wild variety that requires patience and expertise due to its long maturation and unique character. Its natural intensity and structure give this Noble Coyote Mezcal its pronounced mineral profile and layered aromatic complexity.
On the nose bright floral notes with delicate lemon and a subtle hint of blue cheese. On the palate grapefruit rind, flowers and earthy clay come forward. The finish is long, grassy and bright, with touches of eucalyptus, lemongrass and a light oily texture.
Neat or in cocktails, like this Jabalí Mezcal Sour:
45 ml Noble Coyote Jabalí
25 ml Fresh lime juice
20 ml Agave syrup
1 Egg white
Shake first without ice, then add ice and shake again. Double strain into a chilled glass.
