THE PROCESS

Herb Maceration
The base of Pastis 12/12 is a carefully composed blend of over 15 botanicals, including star anise, liquorice, rosemary, thyme, myrtle, orange blossom, fig leaf and fennel. These herbs are macerated (soaked) in neutral alcohol for several days to slowly release their aromas.

Distillation
After maceration, the herb mixture is slowly distilled in copper stills. This slow distillation ensures a smooth and rich extraction of essential oils, resulting in an aromatic and balanced spirit.

Almond Infusion
What sets Pastis 12/12 apart is the subtle addition of almond – a nod to the Italian roots of many residents of Saint-Tropez in the 20th century. This almond note gives the pastis a warm, round finish with light marzipan-like notes.

No colourings or sweeteners
The pastis is not coloured or sweetened, and contains no artificial additives. The clear appearance is purely natural – and changes to a classic cloudy as soon as you dilute it with water.

TASTE PROFILE

Nose: Rich and powerful: star anise, liquorice, candy, spices, incense.

Mouth: Full, balanced, with notes of preserved peach, figs, orange blossom, almond.

Aftertaste: Fresh, slightly bitter finish with hints of almond

HOW TO DRINK:

Classic: ±2cl pastis + (10cl) cold water until cloudy, with or without ice
